“La Papa Llena” Stuffed Potatoes

Ingredients: 
  • 3 large russet potatoes (about 12 ounces each), scrubbed
  • 3 tablespoons unsalted butter , 3 tablespoons melted
  • 1/2 teaspoon salt
  • 1/2 Cup shredded extra sharp cheddar cheese
  • 1/2 cup precooked chopped bacon (optional)
  • 1/2 cup sour cream (optional)
  • 8ozs Maria Louisa Salsa
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon pepper
Preparation Instructions: 

Bake potatoes in Microwave approximately 6 min each on high…(micro ovens may vary in temperature settings. Or, simply bake potatoes in conventional oven, approximately 45 min. at 450 degrees. Make sure to prick the potatoes with a knife before baking, and wrap with foil.

After potatoes are completely baked remove foil, place on a serving plate. Cut the potato the length of the potato on top and gently open with a fork.

Add melted butter, salt, pepper, bacon. Top with sharp cheese, pour Maria Louisa Salsa generously over potato and top with cilantro. Sour cream may be added for extra fun.
