“Spanish Eyes" Deviled Eggs
Ingredients:
- 12 thin slices of Jalapenos from a Jar
- 1/3 cup mayonnaise or Miracle Whip
- 3 tablespoons finely graded Cheddar cheese
- 4 tablespoons Maria Louisa Salsa
- 1 1/2 tablespoons sour cream
- 1 tablespoon chopped green onion
- 1 teaspoon ground cumin
- 6 hard boiled eggs peeled
- Salt and freshly ground black pepper or Spanish Paprika
Preparation Instructions:
Halve eggs lengthwise. Remove yolks and add to a small bowl. Mash the yolks with a fork and stir in the mayo or Miracle Whip, Cheddar, Maria Louisa Salsa, sour cream, green onion, and cumin. Add salt and pepper or Spanish Paprika to taste, and blend well.
Fill the egg whites evenly with yolk mixture and garnish with sliced jalapenos, if desired. Arrange in a container and store, covered, in the refrigerator until ready to serve.
