Grilled Rosemary Chicken Maria Louisa Style

Serve up this fast and fresh dinner from the grill tonight and eat within the hour!

Spank this chicken with flavorful seasonings for a mouth watering and low calorie meal!

 

 

Ingredients: 

4 fresh chicken breast

lemon pepper

kosher garlic salt

1/4 Tsp. ground cumin

4 springs fresh rosemary

1 tomatoe sliced for 4 sandwiches

lime juice

olive oil

Optional: sprig of cilantro

your favorite bread ( my choice:  French Baguette)

your favorite lettuce ( my choice: red lettuce)

your favorite cheese ( my choice: provolone)

Preparation Instructions: 

Butterfly all 4 chicken breast, leaving one side like an opened book. Place one sprig of rosemary in each pocket and close. Lightly sprinkle lemon pepper, kosher garlic salt, cumin, olive oil on both sides of chicken and place in a small tray. Pour in fresh lime juice about a 1/4 cup and allow to sit while you preheat the grill. Place chicken breasts on grill approximately 15 to 20 minutes turning often.  ( grilling time varies with the thickness of chicken)  About 1 or 2 minutes before chicken in done, cut French Baguette into 1/2 inch thick slices. Brush both sides of bread evenly with  2Tlbs. of olive oil and place on grill 1 minute or until golden.

Remove rosemary sprigs from chicken and place chicken on bread and top with cheese, lettuce, (optional: sprig of cilantro),tomatoes, and Maria Louisa Salsa and serve!
