Queso Rica

Ingredients: 

 

4 cups grated extra sharp cheese

1 1/2 cups grated Monterey Jack cheese

1 Tbs of cornstarch

1/4 cup whole or 2%milk

cooking oil or shortening

few sprigs of cilantro

8-10 ozs Maria Louisa Salsa

1 package of tortillas (flour or corn)

Preparation Instructions: 

 

 

Place cheeses in large bowl and sprinkle in cornstarch, mix evenly , transfer to a saucepan and add milk and set very on low heat, stirring occasionally, until melted and smooth about 15 minutes

Heat 8-10 ounces of Maria Louisa Salsa in microwave for 1 minute or until hot. Fold Salsa into cheese mixture, garnish with cilantro and serve!

Serve with chips.

Chips

Stack tortillas, cut the stack into six wedges.

In heavy deep skillet heat 1/2 inch cooking oil or shortening. fry the tortilla wedges a few at a time about 1 minute for corn and (45 sec for flour)

until they are golden or crisp, drain on paper toweling. If desired sprinkle with kosher salt.
