Santa Maria style Tri Tip Sandwiches
A wonderful recipe that will impress family and friends! This recipe goes great with a number of sides. Try it with black beans, Cole slaw or simply with tortilla chips and salsa and guacamole!

2lbs beef tri tip roast
8 Sandwich/Hoagie buns
Maria Louisa Salsa ( I prefer Hot, but Medium will work too)
Mexican style shredded cheese (Colby, Monterey Jack and Mild Cheddar cheese optional
Soy sauce
Garlic Powder
Salt/Pepper (to taste)
Olive Oil
Cover trip tip with generous amount of Soy sauce and sprinkle liberally with garlic powder on both sides. Allow to marinate for 2 to 4 hours. Salt and Pepper tri tip to taste just prior to grilling. Cook tri tip over medium grill until internal temperature reaches 165 degrees. Brush each side of the buns with olive oil and toast lightly on grill. Let tri tip rest for about 10 to 15 minutes before slicing. Slice tri tip thin and on the bias. Place tri tip slices on bun and dress with salsa (and cheese if desired. Serves 8
